Moroccan Tomato & Cucumber Salad

I’m a great fan of salads at any time of the year and this recipe is simplicity in itself.

It can be used as a starter or as an accompaniment to grilled fish or meat.

Ingredients:

  • 6 tomatoes deseeded & finely diced
  • 1 cucumber deseeded & finely diced
  • 1 red onion finely diced
  • 1 green capsicum deseeded & finely diced
  • 1 handful chopped parsley
  • 1 teaspoon cumin seeds, roasted & ground
  • 2 lemons juiced
  • 5 dessertspoons of olive oil
  • Sea salt & freshly ground black pepper

Serves 4

Method:

  1. Place all the diced vegetables in a mixing bowl.
  2. Now mix in all the remaining ingredients together, season well with the salt & pepper.
